i froze and then said sheepishly: uh,....nothing much but looking at Youtube videos...hehe...

Opera-Portable is usable off of a USB drive and stores all its data / history / cookies on the USB drive; meaning that as long as your USB drive is unplugged theres nothing to snoop on and it wont show up as a browser when unplugged.
If parental controls are an issue , look up "ultrasurf", it allows people to bypass censorship but it also works for parental blocks.
Both can be run off of a USB drive without having to install it, or administrator permissions.
Verify each of these by scanning with antivirus, but if you think it might work- also try talking to her in a calm way that youre an adult. Sometimes the solutions that seem the hardest can give the biggest reward. If not, hope that helps
